Zeppole

How to make amazing Zeppole in 2 ways - Dairy VS Vegan



Ingredients (w/dairy)

  • Water 48g

  • Milk 62g

  • Dry instant yeast 2g

  • Whole eggs 26g

  • Granulated sugar 12g

  • Salt 1g

  • Olive oil 2g

  • All-purpose flour 135g

  • Lemon zest Half a lemon

  • Vegetable oil Frying

  • Cinnamon sugar or powdered sugar Coating

Directions

  1. Warm water with milk in the microwave to 105-110F.

  2. Add yeast and mix well. Let stand until foamy on top, about 7-10 minutes.

  3. Mix eggs, sugar, salt, and olive oil together and add it to the milk mixture.

  4. Mix in flour in increments and mix well.

  5. Cover and proof for 1 hour, or until it doubles in size.

  6. Heat frying oil to 350F.

  7. Use teaspoons to drop the dough into the oil, and fry until golden brown.

  8. Coat with sugar of choice as soon as you take the dough out of the fryer.

  9. Time to TASTE!!!

  • All-purpose flour 168g

  • Dry instant yeast 4g

  • Water 157g

  • Granulated sugar 14g

  • Salt 4g

  • Lemon zest Half a lemon

Directions

  1. Warm water to 105-110F.

  2. Mix all ingredients in a bowl until well incorporated.

  3. Cover and proof for 1 hour, or until it doubles in size.

  4. Heat frying oil to 350F.

  5. Use teaspoons to drop the dough into the oil, and fry until golden brown.

  6. Coat with sugar of choice as soon as the dough comes out of the fryer.

  7. Time to TASTE!!!
