Cinnamon Rolls

Foolproof recipe for AMAZING Cinnamon Rolls



Sweet Dough Ingredients

  • Whole milk (scalded and cooled) 100g

  • Instant Yeast 8g

  • Bread flour 125g

  • Unsalted butter (room temperature) 100g

  • Granulated sugar 50g

  • Salt 3g

  • Whole eggs (room temperature) 63g

  • Bread flour 125g

Cinnamon Sugar Filling

  • Granulated sugar 125g

  • Ground cinnamon 10g

Royal Icing

  • Milk or water 23g

  • Powdered sugar 100g


Directions

  1. Mix the first 3 ingredients together to make a sponge. Once it comes together, place it in a bowl, cover, and proof until it doubles in size, about 60-90 minutes.

  2. Cream butter, sugar, and salt until smooth.

  3. Mix eggs into the butter mixture, and mix until incorporated.

  4. Add sponge into butter mixture, and mix until incorporated.

  5. Add flour and mix for about 5-6 minutes or until the dough pulls away from the sides of the bowl.

  6. Form dough into a ball. Place in a bowl, cover, and proof until it doubles in size, about 60-90 minutes.

  7. Make cinnamon sugar filling by mixing ground cinnamon with granulated sugar and set aside.

  8. Flour the work surface and top of the dough and roll it to a 1/2" thick rectangle.

  9. Generously spray the dough surface evenly with water.

  10. Sprinkle cinnamon sugar evenly by hand.

  11. Spray the bottom edge of the dough with water.

  12. Loosely roll from the top edge of the dough downwards.

  13. Cut dough into 1" pieces and place on the baking tray. Loosely cover and proof for 30 minutes.

  14. Preheat oven to 350F.

  15. Egg wash tops and sides of cinnamon rolls and bake for 15 minutes or until golden brown.

  16. Make royal icing by whisking powdered sugar with milk or water. You can add more sugar or liquid to get the desired consistency of the icing.

  17. Top cinnamon rolls with royal icing while the rolls are still hot.

  18. Time to TASTE!!!
