Chocolate Truffles

Homemade Dark and White Chocolate Truffles



Dark chocolate truffle ingredients

  • Heavy cream 152g

  • Dark chocolate couverture 340g

  • Vanilla paste 5g

  • Cocoa powder For coating

Directions

  1. Scald heavy cream but do not boil.

  2. Pour hot heavy cream over chocolate couverture and mix with a rubber spatula until smooth.

  3. Add vanilla paste and mix to combine.

  4. Set the mixture in the cooler for about 2 hours.

  5. Scoop and form into balls and roll them in cocoa powder.

  6. Time to TASTE!!!



White chocolate coconut truffle ingredients

  • Heavy cream 16g

  • Unsalted butter 14g

  • White chocolate couverture 170g

  • Vanilla paste 5g

  • Unsweetened desiccated coconut 31g

Directions

  1. Scald heavy cream but do not boil.

  2. Add butter to heavy cream and mix until melted.

  3. Pour hot cream mixture over white chocolate and mix until smooth. If the chocolate is not fully melted, place the bowl over a double boiler and mix until all of the chocolate has melted and the mixture is smooth.

  4. Add vanilla paste and unsweetened desiccated coconut and mix until well incorporated.

  5. Set the mixture in the cooler for about 2 hours.

  6. Scoop and form into balls and roll them in desiccated coconut.

  7. Time to TASTE!!!
